The prolonged exposure to smoke allows the meat to take on a smoky flavor, giving it a taste that can’t be matched any other way. The smoke itself does not cook the meat. The heat of the fire is what actually cooks the meat.

Mistakes to Avoid

Wash hands in warm, soapy water after touching raw meats. Keep raw meat & poultry separate from other foods during storage and preparation.  For extra protection, you should also sanitize utensils and disinfect surfaces to eliminate illness-causing germs.
