Delicious Risotto - (Makes 4 to 6 servings)
Ingredients: 1 1/2 tablespoons olive oil 1 medium onion, finely chopped 1 1.2 cups Arborio rice 3 1/2 cups chicken stock Salt & ground black pepper, to taste 3 tablespoons Romano or Parmesan cheese
1. To preheat the Instant Pot, select SAUTE. Add the oil to the pot.
2. Add the onion and sauté for several minutes, until the onion is translucent.
3. Add the rice and chicken stock.
4. Close and secure the lid. Select the RICE setting and set the cooking time for 15 minutes.
5. Once timer beeps, let the pressure Release Naturally for 10 to 15 minutes, then release any remaining pressure.
6. Open the lid. Add salt and black pepper to taste.
7. Add the Romano or Parmesan cheese and stir then serve.
Perfect Basmati Rice - (Makes 4 servings)
Ingredients: 1 cup white basmati rice 1 1/4 cup water 1/4 teaspoon salt Butter to taste, optional
1. Rinse the rice well.
2. Add the rice, water and salt to the Instant Pot and stir.
3. Close and secure the lid. Select the MANUAL setting and set the cooking time for 6 minutes at HIGH pressure.
4. Once cooking is complete, let the pressure Release Naturally for 10 minutes, then release any remaining pressure. Open the pot.
5. Fluff the rice with a fork. If you like, you can add the butter and serve.
Easy Jasmine Rice - (Makes 4 to 6 servings)
Ingredients: 2 cups jasmine rice 2 cups water 2 teaspoon olive oil 1/2 teaspoon salt
1. Rinse the rice well.
2. Transfer the rice to the Instant Pot. Add the water, oil and salt then stir.
3. Close and secure the lid. Select the MANUAL setting and set the cooking time for 4 minutes at HIGH pressure.
4. Once timer beeps, let the pressure Release Naturally for 10 minutes, then release any remaining pressure. Open the lid.
5. Fluff the rice with a fork and serve.
Spanish Rice - (Makes 4 to 6 servings)
Ingredients: 2 tablespoons butter 2 cups long grain rice 1 1/2 cups chicken stock or water 8 oz. tomato sauce 1 teaspoon cumin'1 teaspoon chili powder 1/2 teaspoon garlic powder 1/2 teaspoon onion powder 1/2 teaspoon salt
1. To preheat the Instant Pot, select SAUTE. Once hot, add the butter and melt it.
2. Add the rice and sauté, stirring occasionally, for 4 minutes.
3. Stir in the chicken stock, tomato sauce, cumin, chili powder, onion powder and salt.
4. Close and secure the lid. Select the MANUAL and cook at HIGH pressure for 10 minutes.
5. Once cooking is complete, let the pressure Release Naturally for 10 minutes, then release any remaining pressure. Open the pot.
6. Fluff the rice with a fork or rice spatula and serve.
Mexican Rice - (Makes 4 to 6 servings)
Ingredients: 1 tablespoon olive oil 1/4 cup onion, diced 2 cups long grain white rice 2 1/3 cups chicken stock 1 cup salsa 1 teaspoon salt
1. Select the SAUTE setting on the Instant Pot and heat the oil.
2. Add the onion and sauté for 2 to 3 minutes, until the onion is translucent.
3. Add the rice and cook for 2 to 3 minutes.
4. Stir in the chicken stock, salsa and salt.
5. Close and secure the lid. Select the MANUAL and cook at HIGH pressure for 10 minutes.
6. Once cooking is complete, let the pressure Release Naturally for 10 minutes, then release any remaining pressure. Open the pot.
7. Fluff the rice with a fork or rice spatula and serve.
French Butter Rice - (Makes 4 to 6 servings)
Ingredients: 1 stick (1/2 cup) butter 2 cups brown rice 1 cup vegetable stock 1 1/2 cups French onion soup
1. To preheat the Instant Pot, select SAUTE. Once hot, add the butter and melt it.
2. Add the rice, vegetable stock, onion soup and stir to combine.
3. Close and secure the lid. Select the MANUAL and cook at HIGH pressure for 22 minutes.
4. Once cooking is complete, let the pressure Release Naturally for 10 minutes, then release any remaining pressure. Open the lid.
5. Serve. If you like, you can garnish the rice with parsley.
Sweet Coconut Rice - (Makes 2 to 4 servings)
Ingredients: 1 cup Thai sweet rice 1 1/2 cups water 1/2 can full-fat coconut milk 2 tablespoons sugar 1/2 teaspoon salt
1. Add the rice and water to the Instant Pot and stir.
2. Close and secure the lid. Select the MANUAL and cook at HIGH pressure for 3 minutes.
3. Once cooking is complete, let the pressure Release Naturally for 10 minutes, then release any remaining pressure.
4. Meanwhile, heat coconut milk, sugar, and salt in a saucepan.
5. When the sugar has melted, remove from the heat.
6. Open the pot and add the coconut milk mixture, stir to combine.
7. Put the lid back on and let it rest for 5 to 10 minutes. Serve. |
