Coffee with Rum & Whipped Cream - (Makes 4 to 6 servings)

Ingredients:

1/2 cup heavy cream

2 cups freshly brewed strong hot coffee

2/3 cup golden rum

Sugar

 

 

1.  Whip the cream until soft peaks form.

 

2.  Divide the coffee and rum into 4 cups and add sugar to taste.  Top with whipped cream and serve immediately.  Do not stir - this drink is sipped from underneath the whipped cream topping.

 


 

Mulled Wine with Rum - (Makes 4 to 6 servings)

 

Ingredients:

1/2 cup sugar, plus more to taste

2/3 cup boiling water

2/3 cup dry red wine

2/3 cup golden rum

4 whole cloves

Ground nutmeg

4 lemon slices

 

 

1.  Rinse 4 punch glasses with hot water.  Put 2 teaspoons sugar in each glass and add 2 to 3 tablespoons boiling water.  Stir until the sugar is completely dissolved.

 

2.  Heat the red wine with the rum and cloves, but do not boil.  Divide between the 4 punch glasses.

 

3.  Sprinkle with a pinch of nutmeg and garnish with a slice of lemon.  Serve immediately.

 


 

Beer with Raspberry Syrup - (Makes 1 servings)

 

Ingredients:

White wheat beer

Raspberry syrup

 

 

1.  Pour the beer into a big ice cream glass and add a dash or two of raspberry syrup.

 

 

 


 

Strawberry & White Wine Punch - (Makes 12 to 16 servings)

 

Ingredients:

2 lbs. strawberries, washed, dried,& hulled

1 bottle chilled dry white wine

1 bottle chilled champagne or sparkling wine

A few leaves of fresh lemon balm

 

 

1.  Cut the strawberries into halves or quarters, depending on size, and place them in a punch bowl or large glass bowl.  Pour the wine over them and chill for at least 2 hours.

 

2.  Add the champagne and lemon balm and serve chilled, using a decorative ladle to fill individual glasses with punch.

 


 

Cold Duck - (Makes 12 to 16 servings)

 

Ingredients:

1 lemon

2 bottles chilled champagne or sparkling wine

 

 

1.  Wash and dry the lemon.  Peel off the zest in spirals as thinly as possible, using a peeler or sharp knife, and without removing the white pith.  Put the zest in a large pitcher and pour the wine over it.  Place the pitcher in an ice bucket and let stand for 15 minutes.

 

2.  Taste the wine every so often and when it has a slight lemon flavor, remove the peel.  Pour the champagne into the pitcher just before serving and keep the drink chilled in an ice bucket.

 


 

Beer with Lemon Soda - (Makes 2 servings)

 

Ingredients:

2 cups chilled lemon-flavored soda

2 cups cold beer

 

 

1.  Pour the soda into a pitcher and slowly add the beer.

 

 

 

 


 

White Wine with Seltzer Water - (Makes 1 servings)

 

Ingredients:

1/2 cup dry white wine

1/2 cup soda water

 

 

1.  Mix the wine with the soda water and serve at once.
