Honey Glazed Chicken - (Serves 4)

 

Ingredients:

5 tablespoons honey

Pinch of salt

1 chicken (2 1/4 lbs.), washed & patted dry

10 stalks lemongrass, tender inner part of bottom third only, roughly chopped

20 fresh lime leaves

10 small red shallots, peeled

10 cloves garlic, peeled

2 cups rice wine or sake

 

 

1.  Combine the honey and the salt in a small bowl and mix well.  Rub the chicken with this mixture and set it aside.

 

2.  Line a casserole dish large enough to accommodate the chicken with aluminum foil.  Scatter the chopped lemongrass, lime leaves, shallots and garlic in the dish.  Heat briskly until the bottom starts to change color.  Add the chicken, reduce the heat and cover.  Cook for 5 minutes, then add a little of the rice wine.  Cook in the covered pan for 1 hour, turning the chicken regularly and gradually adding more rice wine.

 

3.  Discard the lemongrass, lime leaves, shallots and garlic.  Carve the chicken, place on a platter and serve with chili coriander dip and raw vegetables or fruit.

 


 

Soy Glazed Spare Ribs with Star Anise - (Serves 4)

 

Ingredients:

2 1/4 lbs. pork spare ribs

6 star anise pods

4 cloves garlic, peeled

4 tablespoons palm or dark brown sugar or honey

1/2 cup soy sauce

 

 

1.  Cut the spare ribs into three pieces.  Use a sharp knife to make a diamond pattern in the pork to help the marinade penetrate the meat.

 

2.  To make the marinade, combine the star anise and garlic in a mortar and pound into a paste.  Add the sugar or honey and soy sauce then mix well.  Marinate the ribs in this mixture for at least 1 1/2 hours.

 

3.  Grill the spare ribs over medium heat for 15 minutes, turning them regularly and basting with the leftover marinade.  Alternatively, roast hem in the oven for 10 minutes at 350 degrees F, basting periodically with the leftover marinade.

 


 

Barbecued Beef Skewers - (Serves 4)

 

Ingredients:

1 teaspoon ground black pepper

1 stalk lemongrass, tender inner part of bottom third only, chopped

3 cloves garlic, peeled & chopped

2 shallots, peeled & chopped

4 tablespoons soy sauce

2 tablespoons palm or dark brown sugar or honey

14 oz. sirloin beef, cut into 2-inch pieces

Bamboo skewers, soaked in water

 

 

1.  To make the marinade, combine the pepper, lemongrass, garlic and shallots in a mortar and pound into a fine paste.  Ad the soy sauce and the sugar or honey and mix well.

 

2.  Skewer the beef and marinade it for 1 hour in a shallow dish.  Grill the kebabs or broil them in the oven for approximately 5 to 6 minutes on each side, basting them with the leftover marinade.

 

3.  Serve with green papaya salad and French bread.

 


 

Seasoned Barbecue Pork - (Serves 4)

 

Ingredients:

1 lb. ground pork

3 tablespoons fish paste

4 cloves garlic, peeled & chopped

2 shallots, peeled & chopped

3 stalks lemongrass, tender inner part of bottom third only, chopped

Pinch of salt

1 tablespoon palm or dark brown sugar or honey

6 lime leaves, finely sliced

A few banana leaves or aluminum foil

 

 

1.  Combine the pork, fish paste, garlic, shallots and lemongrass in a food processor and grind into a paste.  Add the salt, sugar or honey and lime leaves then mix until just combined.

 

2.  Place a banana leave or a piece of aluminum foil on a clean work surface.  Place a little of the pork mixture in the middle and fold the leaf or foil to make a small rectangular packet.  Cut a second strip of banana leaf or foil the same width as the packet.  Wrap the second strip around the packet the other way and secure with a toothpick.

 

3.  Grill the packets for 15 minutes over medium heat, turning them regularly, or bake them in the oven for 20 minutes at 400 degrees F.  Serve with raw vegetables or fruit.

 


 

Grilled Pork - (Serves 4)

 

Ingredients:

3 cloves garlic, crushed & peeled

5 tablespoons soy sauce

3 tablespoons palm or dark brown sugar or honey

2/3 cup coconut milk

Ground black pepper, to taste

14 oz. lean pork loin, thinly sliced

 

 

1.  Combine the garlic, soy sauce, sugar or honey, coconut milk and black pepper in a shallow dish and mix well.  Marinate the pork in this mixture for 1 hour.

 

2.  Grill the pork over medium heat or roast it in a 400 degree F oven, turning regularly until it's dried and starts to caramelize, about 15 to 20 minutes.  Cut into strips and serve with rice and pickled vegetables.
